It wasn&rsquo;t at all what I expected given the typical creamy Japanese ramen I&rsquo;m familiar with. However, my worries dissolved the moment I took my first sip of the stock. It was clean and simple, not too salty but very tasty. The pork shoulder slices and vegetables that were in the soup, proved to be surprisingly satisfying. It felt like &ldquo;home&rdquo;. It was perfectly balanced in its simplicity. I was told by my guide that it is authentic Shio Ramen and one of the best he had tasted. No argument here.
